How are those new year’s resolutions coming? One of my consistent resolutions is to eat more veggies. Homemade salad dressings are an easy way to spice things up a bit to get yourself eating more veggies.
After you have a few salad dressing formulas under your belt, experiment a bit and expand your repertoire. This honey mustard makes a great salad dressing, and the kids love it as a veggie dip too.
honey mustard dressing
- 2 tbsp Dijon mustard
- 1 tbsp raw honey
- 1 clove garlic, minced
- 1/4 cup white or red wine vinegar
- 1/2 cup extra virgin olive oil
- 2 green onions, diced (optional)
- Salt and pepper to taste
- Dump all of the ingredients in a glass jar with a tight-fitting lid. Put the lid on, and shake vigorously for about a minute. It tastes better after it sits so that flavors meld together, and it will last in the fridge for a month or longer (if it lasts that long).
*When I make it as a dip, I add a tablespoon or so of homemade mayonnaise or plain yogurt to thicken it up a bit.
